This workshop with chefs Soane Pasi and Dr Tracy Berno will teach you how to make simple ferments and preserves fit for the winter season!

About this Event

This workshop is perfect for anyone wanting to learn about or improve their knowledge and experience with fermenting and preserving seasonal ingredients.

Winter can be a wonderful time to explore and celebrate seasonal produce! Join Tracy and Soane in the kitchen to get hands-on with learning how to make a simple fermented sauerkraut, a seasonal achar (spicy mixed-vegetable pickle), and a tasty, versatile curry paste! Tracy and Soane will also demonstrate and discuss fun ways to use these ferments and preserves to make delicious seasonal dishes.

After preparing these recipes, the group will go for a wander around the garden to take a closer look at what ingredients are available this time of year, and to round out the experience, there will be a chance to enjoy a seasonal lunch all together!

Participants are asked to please bring 3 glass jars (or firmly sealable containers)—1 sizable jar (300 – 500ml) for the sauerkraut and 2 smaller containers to take home samples of the achar and curry paste!

Dr Tracy Berno is a lecturer in food studies at AUT. She is passionate about resilient food systems and helping connect people to the sources of their food through cooking. She is also a keen preserver who will try her hand at fermenting almost any fresh ingredients!

Soane Pasi is a Tongan-born, French-trained chef who loves to share his knowledge and experiences of foraging, cooking, food stories, and preserving. He enjoys connecting people with each other through the rich culture, traditions, and flavours that surround our food.

Soane and Tracy work together as part of the New Caledonia-based Pacific Food Lab. They each love to spend time in the kitchen and cooking together, having a laugh and sharing their enthusiasm for all things food!
